Mango Chutney / Manga Chammanthi



Ingredients
  • Mango - 1 small
  • Green Chilly - 3
  • Shallots - 4
  • Coconut - 1/2 cup
  • Ginger - small piece
  • Curry leaves - a few
  • Salt - As needed
Preparation

Grind all the ingredients together without adding water.
This goes well with rice / Kanji

Mango Ice Cream


Ingredients
  • Mango - 2 
  • Sugar - 1/4 cup 
  • Cream - 1/2 cup 
  • Milk  -1/2 cup 
  • Vanilla Essence - 1/4tsp
Preparation

1.Scoop and collect pulp of mango with a spoon and place it in a blender with sugar, milk and blend well until sugar is dissolved.

2.Add cream and whip until all the ingredients are mixed well.

3.Pour into a airtight bowl. Freeze it for 2 hrs.

4.Take out and grind it again in a mixer until smooth and refrigerate. Freeze it overnight, scoop and serve.

Chocolate Ladoo


Ingredients
  • Digestive Biscuits - 20
  • Condensed milk - 1/2 cup
  • Cocoa powder - 2 & 1/2 tbsp
  • Nuts (chopped) - 2tbsp
  • Coconut Flakes - As required

Preparation
1.Grind biscuits using grinder. In mixing bowl add powdered biscuits, cocoa powder, chopped nuts and condensed milk.

2.Combine all ingredients well and make a dough. Grease your hand with little ghee,  Pinch small portion and roll it into ball and keep aside.

3.For coating ladoo’s, first dip them in condensed milk. Roll it over dry grated coconut and keep aside.

Banana Coconut Fry / Pazham Varattiyathu

Ingredients
  • Ripe banana - 3
  • Grated coconut - 1/2 cup
  • Sugar - 1 tbsp
  • Ghee - 3 tbsp
  • Cardamom powder - a  pinch
  • Cashew nuts - 2 tbsp
  • Raisins - 1 tbsp
Preparation

1.Cut the bananas into small pieces.

2.Heat ghee in a pan then add raisins, cashew nuts,grated coconut and fry for 3 minutes.

3.Add banana pieces and cardamom powder into it and fry for 5 minutes.

Grapes Pickle

Ingredients
  • Green grapes –1 cup
  • Oil- 1/4 cup
  • Fenugreek - 1/4 tbsp
  • Turmeric powder -1/2 tbsp
  • Asafoetida -1.5 tsp
  • Kashmiri chilli powder - 4 tbsp
  • Vinegar - 2 tbsp
  • Ginger,green chilli,garlic - 1/2 tbsp each.
  • Mustard seeds, curry leaves, dry chilli - for seasoning
Preparation

1. In a hot pan ,sauté the grapes in some oil well. Keep this aside.

2. Add ginger, garlic, green chilli in to some hot oil. Cook it well until it gets light brown color.

3.Add red chilli powder, fenugreek, asafoetida, turmeric powder and Sauté this for 2-3 sec. Add few drops of water. Boil this mixture well. Then add the above mixture to cooked grapes.

4.Season with curry leaves, mustard and dry chilli. Mix all together well & add enough salt as required. Remove form heat. Then add vinegar.

Papad Curry

Ingredients
  • Papad - 12
  • Coconut - 1/2 cup
  • Red chilly powder - 1 tbsp
  • Turmeric powder - 1/2 tsp
  • Cumin Seeds - 1/2 tsp
  • Shallots - 3
Preparation

1.Fry the papad and keep it aside.

2.Grind coconut, cumin, shallots, turmeric and chilly powder.

3.Heat oil in a pan, splutter mustard, add 2 shallots,2 dry red chilli, 1 sprig curry leaf and saute well.

4.Add the grinded mixture, 1 cup water and salt.(add less salt as the papad is already salty)

5.When starts to boil, break the papad to small pieces and add into this.
