Fish Ularth

Ingredients 
  •  Fish - 250 gm
  •  Onion - 1
  •  Green Chilly - 3
  •  Ginger - 1 tsp
  •  Garlic - 1tsp
  •  Red Chilli powder - 1 tsp
  •  Turmeric powder - 1/4tsp
  •  Coriander powder - 2tsp
  •  Fennel Powder - 1tsp
  •  Pepper powder - 1/2 tsp
  •  Vinegar - 1tsp
  •  Curry leaves
For Marination
  •  Turmeric powder - 1/4 tsp
  •  Ginger garlic paste - 2tsp
  •  Pepper Powder - 1 tsp
  •  Red Chilli powder - 1 tsp
  •  Coriander powder - 1 tsp
  •  Fenugreek powder - 1/4 tsp
  •  Fennel powder - 1/2 tsp
  •  Rice flour - 1tbsp
  •  Vinegar - 1 tsp
  •  Salt
 Preparation

 1. Clean the fish and cut into medium pieces.

 2. Marinate it with ingredients for 20 minutes.

 3. Heat oil in a pan  and fry the marinated fish pieces and keep it aside.

 4. In the same pan, pour some oil, add crushed ginger, garlic, sliced onion, chopped green chilly and curry leaves. Saute till onion turns brown.

 5. Add vinegar and saute in high flame. Add spice powders except pepper, salt and saute well.

 6.Reduce flame and add curry leaves, then add fried fish and gently coat with masala.

 7. Add 1/4 cup water. Cook till the water evaporates and add pepper powder.
 

Coconut Ladoo



Ingredients
  • Condensed milk - 1/2 tin 
  • Desiccated coconut - 1 cup + 1/2 cup for rolling 
  • Milk powder -  2 tblsp 
Preparation

1.In a non stick pan, add condensed milk, grated coconut and milk powder.

2.Heat over medium flame and stir until the mixture turns non sticky and becomes a mass.

3.Switch off the flame and let it become warm. In a plate place the remaining grated coconut.

4.Grease your hands with ghee. Make equal sized balls out of the mixture and roll these ladoos over the grated coconut. 

Bread Halwa


Ingredients
  • Bread - 6 slices
  • Milk - 1 cup
  • Sugar - 1/2 cup
  • Ghee - 1/4 cup
  • Cardamom powder - 1/4tsp
  • Cashew/Raisin/Almonds - a few
Preparation

1.Cut the bread slices into small pieces.

2.Heat ghee in a pan and fry cashew & raisins. Keep it aside. Then saute bread pieces in ghee.

3.Add milk and sugar. When bread pieces stick together add cardamom powder, cashew and raisins.

4.When it reaches the consistency( it will become non-sticky and it starts leaving the sides) switch off the flame.

5.Grease the plate with little ghee and spread the halwa into it.

Nadan Chicken Curry


Ingredients 
  • Chicken – 1 kg
  • Onion – 2
  • Ginger – 1.5 inch, roughly chopped
  • Garlic – 8 cloves, roughly chopped
  • Green chilies – 6
  • Curry leaves – 1 sprig
  • Tomato – 2 medium-small, chopped
  • Coconut oil – 2 tbsp
  • Mustard seeds – 1/2 tsp
  • Dry red chilies – 2
  • Curry leaves – 1 sprig
Spice Powder
  • Turmeric powder – 1/2 tsp
  • Chilly powder – 1 tbsp
  • Coriander powder – 1 tbsp
  • Chicken masala powder – 2.5 tsp
Preparation

1. Grind the ginger, garlic, green chilies and curry leaves to a coarse mixture and keep it aside. Now grind the roughly chopped onion to a coarse mixture.

2. Heat 2 tbsp coconut oil in a pressure-cooker.  Add the ground ingredients with enough salt and saute until browned.

3. Add the spice powders. Saute for about 30 seconds. Add chopped tomato pieces. Saute well until tomato gets mashed up and oil separates.

4. Add 1/4 cup hot water. Mix well. Add the chicken pieces, enough salt and mix everything well so that the chicken will be coated with the gravy. Add 1/2 cup hot water.  Pressure-cook for 1 whistle. Switch off the flame. Check for salt and adjust.

5. Heat 1 tsp coconut oil in a small pan. Splutter mustard seeds and fry dry red chilies and curry leaves. Pour over the prepared curry.

Banana Rolls

Banana Rolls



Ingredients 
  •  Ripe banana - 2
  •  Sugar - 2 tbsp
  •  Cardamom - 3 or 4(powdered)
  •  Grated coconut - 1/2 cup
  •  Ghee
  •  Nuts
Preparation

 1.Slice the banana into 3 pieces lengthwise.

 2.Heat ghee in a pan and shallow fry both sides of banana slices and keep it aside.

 3.In the same pan add some ghee and saute coconut, nuts, cardamom and sugar.

 4.Roll the slices and fill the coconut mix and fix it with a tooth pick.

Papad Sambar


Ingredients
  • Plain Papad - 10
  • Onion  - 1 chopped finely
  • Tomato  - 1 chopped
  • Ginger garlic paste  - 2 tsp
  • Sambar powder - 2 tsp
  • Coriander leaves  - 2 strings
  • Coconut - 3 tbsp
  • Split roasted gram - 2 tbsp
  • Fennel seeds - 2 tsp
Preparation

1.Fry the papads and break it into 3 or 4 pieces and keep it aside.

2.Heat oil in a kadai and Add the onions and fry them till they become translucent.

3.Add the ginger garlic paste and toss it for 2 minutes.

4.Now add the tomatoes followed by the salt and sambar powder and saute for few minutes.

5.Pour some water and add the fried papads when it is about to boil.

6.In the meantime grind the masala to paste and add this paste to the mixture.

7.When it starts boiling remove the mixture from heat and garnish with the coriander leaves
